Our little nugget loves helping out in the kitchen! As soon as one of us starts prepping a meal, our daughter can usually be found scooting a dining room chair into the kitchen, so that she can climb up and help out! We love her enthusiasm for baking and cooking, and we encourage her to assist us on a regular basis. But if I’m being totally honest, there are a few cooking/baking tasks that our three-year-old would love to assist us with, that still make my husband and I nervous. Those tasks usually involve a hot stove or oven, sharp knives, etc. I’m sure they are the very same tasks that make you a bit nervous, when your kiddo decides to be a sous chef. That’s why I love finding recipes that our little nugget can make entirely on her own…and these Banana Pudding Cups are perfect!
There is no heating, baking, or cooking required. And the slicing of the bananas can be done with a plastic knife, or butter knife. This allows for some knife skills practice, without the threat of losing any fingers. π
Your kiddo is sure to love having full command of the kitchen, as they prepare this delicious treat, but I bet they enjoy eating it even more! How can you say no to creamy vanilla pudding, paired with banana slices and Nilla Wafer cookies?!?
Banana Pudding Cups
Ingredients:
- 3.4 oz. Box Jell-O Instant Vanilla (or French Vanilla) Pudding Mix
- 2 Cups Milk
- 1 Banana
- Nilla Wafers (we used Mini Nilla Wafers because I had them on-hand, but I think the regular sizeΒ fill the bottom of the cupcake liners a bit better)
Instructions:
- Line six cavities of a muffin tin with cupcake liners, and set aside. Note: If you’re using paper cupcake liners you will want to consume all of the banana pudding cups the same day that they are made. If you want them to last longer, I suggest using silicone cupcake liners.
- Pour the instant vanilla pudding mix into a medium-size bowl. Add the milk, and whisk together until thoroughly combined. Place the pudding mixture into the refrigerator for at least five minutes.
- While you are waiting for the pudding to set, grab the lined muffin tin and place one Nilla Wafer into the bottom of each cupcake liner.
- Peel the banana, and slice it into small rounds. Place at least one banana round on top of the Nilla Wafer in the bottom of each cupcake liner. Feel free to add more banana slices, if so desired.
- Once the pudding has set, carefully spoon the mixture into the cupcake liners.
- Top each pudding cup with one additional banana round and Nilla Wafer.
- Enjoy!
