There is nothing better than celebrating Independence Day with a nice cool treat…especially if that treat comes in red, white, and blue! These delicious, fruit-filled Patriotic Popsicles are super easy to make, and they will be the perfect addition to any backyard BBQ this Fourth of July.
Our little nugget was never a huge popsicle fan…at least, not until we purchased these fun, rainbow-colored silicone popsicle molds. For whatever reason, these molds were a game-changer. Maybe it’s the bright colors, or maybe it’s the fact that they are easier for little hands to hang on to. I love them because they are super easy and convenient to use, 100% BPA-free, and top-rack dishwasher safe. And let’s be honest…the vibrant rainbow colors make me a bit giddy too. π
A lot of times, we will just fill these silicone popsicle molds with fruit juice and call it a day, but for certain holidays, we try to step up our game.
Patriotic Popsicles
Ingredients:
- Raspberries (6 oz.)
- Blueberries (6 oz.)
- Coconut Water
- Popsicle Molds (As I mentioned above, we love these silicone popsicle molds, but any type of popsicle mold will work for this recipe)
Instructions:
- Rinse the blueberries under cold water. Make sure to remove any stems that may still be attached.
- Add the blueberries to a food processor or blender.Β Puree until smooth. Feel free to add a splash of coconut water, to thin out the mixture.
- Pour equal parts of the blueberry mixture into the bottom of each popsicle mold. Place in the freezer for at least one hour (or until firm).
- Once the blueberry layer has hardened, pour equal amounts of coconut water into each popsicle mold (making sure to leave enough space at the top of the molds for the third layer). Place the popsicle molds back in the freezer for at least one hour (or until firm).
- Rinse the raspberries under cold water, and add them to a food processor or blender. Puree until smooth. Feel free to add a splash of coconut water, to thin out the mixture. Once the coconut water has hardened in the molds, pour equal amounts of the raspberry mixture into each mold. Place the lids on each popsicle mold and pop them back into the freezer for another hour, or until the popsicles are frozen solid.

Our little nugget was more than happy to help me make these fruity, homemade popsicles…but only if she could be in charge of pressing the food processor buttons. π I was happy to forfeit that responsibility in order to have my little helper in the kitchen.
